- 12 Frantoi Cutrera Semi Dried Cherry Tomato halves
- 1 garlic clove, peeled and minced
- 1/3 c balsamic vinegar
- 1/2 tsp salt
- a few turns of freshly ground pepper
- 1/2 c grated Parmesan cheese
- 1/4 c extra virgin olive oil
- Toss all ingredients except the olive oil in the bowl of a food processor or blender fitted with a metal blade, and puree to a thick paste.
- While machine is running, add olive oil in a slow stream until blended. Adjust salt and pepper as needed.
