Cheesecake with L’Epicurien Lemon Curd

Mini cheesecake with cranberries


PF5397 Lemon CurdIngredients:
8oz of cream cheese, softened
1 egg
3 heaping Tablespoons L’Epicurien Lemon Curd
2 heaping Tablespoons sifted powdered sugar
8 La Trinitaine butter galettes
Baking cups
Griottines or berries of your choice
1. Thoroughly mix all except the galettes and the Griottines
2. Line cupcake tins with 8 baking cups and place a galette in the bottom of each cup
3. Divide batter among cups and bake for about 30 minutes at 350 degrees
4. When ready to serve, top with Griottines or  your choice of berries.
